Baked Veg Samosa

Happy Holi every one :) Even though we dont celebrate Holi at my home, I just love the festival. The Vibrant colors and the way the people enjoy splashing water colors on every one... Sounds very much liberating to me.. I guess may be, in every one there is a hidden wish to break free from the monotonous day to day life and have some fun and that is what holi sounds to me about... Fun or Masti !!

On the last year of college, we decided to celebrate Holi in college campus with friends. Since it was the last year, we wanted to do things that we will remember for ever as fond memories and celebrating Holi I must say, became one such good memory... We enjoyed splashing colors on every one in campus and after that, there was this huge daunting task of removing colors from face and hair before going home!!! I remember trying to sneak past my parents and going to wash up as soon as reaching home.. Still brings a smile to my face every time I recall the wonderful memories :)

March is coming to an end by this week. I cant believe its 4 months since I came here ( Gained 4 kg in weight also by the way !!) Time flies so soon... This month has not been that great for me.. I have been sick most of the month.. Today I started feeling a little better and wanted to prepare something delicious and blog about it.. I have been thinking about preparing Samosas from a long time. Decided to try it out today.. There is something exciting about preparing  a new dish ( Trying out something new) and the satisfaction you get when it comes out well ( A job well done :) )

During my childhood, my dad used to buy me mini samosas almost every week... I didnt pay much attention to what were the ingredients in the stuffing that time, but I dont recall potato being the main ingredient.. After a while, I stopped eating samosas and then when I was in hyderabad, I started trying them out again. But where ever I had samosas, the main ingredient was potatoes and I didnt like them much... When I decided to make samosas once I started the blog, all the recipes that I found, had potatoes and peas.. I hate potatoes by the way ( But my hubby loves them ) and am allergic to peas... I wanted my samosas to taste like the ones I had in my childhood from the bakery near my home.. Thought a while and decided to make my own stuffing... Also I dont like deep frying much.. I go for it only when I find that there are no alternatives.. Hence I decided to bake my samosas... I like my snacks to be healthy.. I hardly get any exercise out here and the least I can do is to try to eat healthy... Hence I used wheat flour for making samosas instead of maida... Check out the recipe...

Baked Samosas:

Prep Time: 20 min
Cook Time: 25 min
Total Time: 45 min

Ingredients:

For the Stuffing:

1 potato
1 small onion
1 carrot
1/4 cup chopped cabbage
1 green chilly
1 inch ginger
1/4 Tbsp Turmeric
1/2 Tbsp Chilly Powder
1 Tbsp Coriander Powder
1/2 Tbsp Garam Masala
1/2 Tbsp Chat Masala
1 Tbsp Oil
1 Tbsp Cumin Seeds
Salt

For the dough:

1.5 cups of Wheat flour ( You can use half wheat flour, half maida combo or use only maida)
1 Tbsp Ajwain seeds ( Carom seeds)
Salt
Water

Prepping:

Step 1: Boil a potato and mash it well once done.
Step 2: Prepare the dough:
Mix wheat flour, salt, carom seeds and water and prepare the dough. The dough should be soft. Keep aside till stuffing is done.

Step 3: Cut the onion, carrot, cabbage, ginger and green chilly into very thin slices.

Method of Preparing:

Step 1: Preparing the stuffing:

  • Heat 1 Tbsp oil in a non stick pan. Once the oil becomes hot, add cumin seeds.

  • Once the cumin seeds crackle, add ginger and green chillies. Saute for 2 min.

  • Add onion and saute till it becomes soft. Then add cabbage and carrot.
  • Cover and cook for 5 min. Add mashed potato. Mix well.

  • Add turmeric, chilly powder, garam masala, coriander powder, chat masala and salt. Mix well. Cook covered for 2min. Switch off. Let the mixture cool.

Step 2:

Knead the dough by applying oil on hands and make small balls out of the prepared dough. Using the rolling pin, roll into an oval shape. Make sure it is rolled thin.

Then divide into half.

Now take one half and make a cone out of it.

Place the filling and cover the ends of the samosas nicely.

Repeat till all the balls are over.

Step 3:

Preheat the oven to 325 F.

Step 4:

Line the baking tray with parchment paper. Grease the parchment with little oil. Arrange the samosas on the baking tray.

Step 5:

Place the baking tray in the middle rack of the oven and bake for 10min. Then turn the samosas and bake for another 15 min.

Crispy Samosas are ready. Serve hot with green chutney or any sauce.

  1. It looks very delicious. I try this recipe tomorrow. Today I have a lot of work. My boss watching me, so I'm not bored in work ;) Maybe I should change my office job? If I was a chef I might cook at work and nobody complaint :) Thanks for this recipe :)
