Yummy Palak Paneer :) or Spinach Cottage cheese recipe

I love any Paneer dish. Recently one of my friends taught me how to make really good Paneer gravy. After that I have been experimenting various Paneer recipes. I will post the Paneer gravy recipe later. Today I made Palak Paneer which turned out really good :) 



Ingredients: 

1/2 cup Paneer
1 Onion 
1 Tomato
1/2 bunch Palak leaves (Spinach)
2 cloves of Garlic
1/2 teaspoon Turmeric
1/2 teaspoon Chilli Powder
1/2 teaspoon Garam Masala
2 teaspoon oil
Salt

Prepping: 30 minutes

Step 1: Keep Frozen Paneer at least 30 minutes outside the fridge.  
Step 2: Wash Spinach leaves and keep aside.  Boil some water in a vessel. Switch off and dip the spinach leaves in the boiling water for 3 - 4 min. Take the spinach leaves out and dip the spinach leaves in cold water for 2 -3 minutes.
Step 3: Puree the spinach leaves in a Blender/ Mixer and keep aside. 
Step 4: Cut onions and tomato. Shape doesn't matter. 
Step 5: Heat oil in a non stick pan. Once oil is hot, add onions and saute till onions become soft. 
Step 6: Add garlic to the onions and stir well. 
Step 7: Add tomato to the mixture. Once tomatoes start getting soft and mushy, switch the heat off. Keep the mixture aside for sometime till it cools. 
Step 8: Grind the onion-tomato-garlic mixture in a blender / mixer till it is smooth.
Step 9: Cut the paneer into small cubes.

Method of preparation: ( 15 - 20 min)

Step 1: 

Heat oil in the same pan that you have prepared the onion tomato mixture. You can add butter instead of oil for a richer taste.

Add onion tomato grinded mixture once oil becomes hot. Saute till oil starts leaving the mixture. This will take around 5 - 8 minutes. 

Step 2:

Now add turmeric and chilli powder and mix well.

Step 3: 

Add spinach puree and mix well. Cook with lid for 5 minutes. 

Step 4: 

Add garam masala and salt and mix well. Cover and cook for another 3 minutes. 

Step 5: 

 Add Paneer and cover and cook for 3 - 5 minutes and switch off. Serve with Rice or Chappathi. 

Note: 
For a richer taste, use butter instead of oil. Also at the end you can add cream.
